Firstly, it has been a few weeks since I have been able to post! My little MacBook Air bit the MacBook dust and I only just had it returned lovingly to my arms. Back in business over here at Our Italian Table. Now for the fun part – it is that time of year when we must find the perfect summer house cocktail. When the weather turns warm, my little taste buds crave Campari. It screams summer to me – many memories of sitting on the beach in Sicily sipping Campari confections that the bartender had created. So my only requirement was to create a drink that featured Campari. After a few weeks of trial and error, I think I have found the winner which I have named The Principessa – its cool, royal pink color deserves a regal name I think :o)! Welcome to the grand unveiling of ……(drumroll please)……The Principessa – a frosty blend of campari, vodka, pink grapefruit juice and a splash of seltzer! I tested it out on the family this weekend and had rave reviews. (And yes, that is a Christmas tree stirrer in my Principessa….oddly, all my drink stirrers have broken with the exception of my Christmas tree topped ones – so we celebrate Christmas all year :o)). And please do stop by this summer for a frosty one under the pergola….we will be waiting!! Salute!
The Principessa
1 1/2 ounces of Campari
1 ounce of vodka
Pink Grapefruit juice
Seltzer
Lime slices
Directions:
Fill a tall glass with ice and pour in the Campari and vodka. Add about 2 ounces of pink grapefruit juice. Fill to top with Seltzer. Stir and add lime slice. Serve!
Wow Michele! A new twist on Campari – Thanks!! I enjoy making versions of the Negroni and yours sounds like another, not too sweet alternative!
Oddly, I can think of only TWO people I know who share my love of Campari (here in the U.S.) – so, too bad for the rest! Hey, if I happen to end up visiting friends up in Kintnersville in Aug. it’d be neat to share a toast to Italia right from Pa.!!!!! Cheers! – Tom B.
