Stefano’s Pear, Pecorino and Arugula Salad

It is steamy, hot and humid here on the East Coast today. With my recent visit to Italy fresh in my mind, I knew from the moment my eyes opened this morning what I was having for lunch – Stefano’s refreshing pear, pecorino and arugula salad (see previous post on Stefano’s great restaurant in Tuscany).  This delightful salad is so easy to make yet so incredibly delicious. The bite of the arugula and pecorino balanced against the sweetness of the pear is just heavenly.  Just perfect for this hot sunny day. Enjoy!

Stefano’s Pear, Pecorino and Arugula Salad

Ingredients:

2 ripe pears (I used Bosc)

Juice from one lemon, divided

6 ounces Pecorino Toscano cheese (use more or less as you prefer)

1 cup packed arugula

1/4 cup extra virgin olive oil

Freshly ground black pepper

Directions:

1. Peel and dice pears. Sprinkle with juice from 1/2 lemon.

2. Dice pecorino cheese and add to pears. Mix to blend.

3. Toss with argula. Add olive oil, rest of lemon juice and freshly ground black pepper.

4. Open a crisp bottle of white wine and serve! Enjoy!!
